Baysox to Buffalo Soup

“This is an original recipe from a mediocre cook! Voted award winning....by family members!” – Brian Smallcross

  • 2 cloves of minced garlic
  • 1 small onion chopped
  • 1 chopped bell pepper
  • 1 C chopped carrots
  • 1 C chopped celery
  • 1 small can of cream of chicken soup (condensed)
  • 2 cans of milk
  • 1 can of water
  • 1 C shredded cheddar cheese
  • 1/4 teaspoon of ground black pepper
  • 2 cups of chopped spinach (loosely chopped)
  • 2 pulled cooked breasts of chicken
  • Buffalo sauce (1/2 cup or more depending on taste)
  • Crumbled blue cheese
  1. Sauté garlic, onions, bell pepper, celery, and carrots in oil for 5 minutes
  2. Add all other ingredients (other than blue cheese),
  3. bring to boil, bring heat down to low and simmer for 30 minutes.
  4. Add blue cheese on top for serving.
