Baysox to Buffalo Soup
“This is an original recipe from a mediocre cook! Voted award winning....by family members!” – Brian Smallcross
- 2 cloves of minced garlic
- 1 small onion chopped
- 1 chopped bell pepper
- 1 C chopped carrots
- 1 C chopped celery
- 1 small can of cream of chicken soup (condensed)
- 2 cans of milk
- 1 can of water
- 1 C shredded cheddar cheese
- 1/4 teaspoon of ground black pepper
- 2 cups of chopped spinach (loosely chopped)
- 2 pulled cooked breasts of chicken
- Buffalo sauce (1/2 cup or more depending on taste)
- Crumbled blue cheese
- Sauté garlic, onions, bell pepper, celery, and carrots in oil for 5 minutes
- Add all other ingredients (other than blue cheese),
- bring to boil, bring heat down to low and simmer for 30 minutes.
- Add blue cheese on top for serving.
