Chili

Ingredients

  • 1- 12oz can black beans
  • 1- 12 oz can kidney beans (dark)
  • 1- 12 oz can pinto beans
  • 1- 12 oz can tomato paste
  • 1- ripe tomato
  • 1- yellow onion
  • 1- red bell pepper
  • 1- poblano pepper
  • 1- 1 stalk green onion
  • 1 cup sour cream
  • 1 cup mild cheddar cheese
  • 1 cup water
  • 1 tbsp black pepper
  • 1 tbsp chili powder
  • 1 tbsp smoked paprika
  • 1 tsp onion salt
  • 1 tsp garlic salt
  • 1 tsp dark brown sugar

Directions

  1. Preheat slow cooker
  2. Rinse and dice tomato, onion, red pepper, and poblano pepper
  3. Pour pinto beans, red beans, black beans (and their juices), tomato paste and water into slow cooker and stir
  4. Add black pepper, chili powder, smoked paprika, onion salt, garlic salt, and brown sugar and stir
  5. Cook 4-6 hours in slow cooker (high)
  6. Top with sour cream, cheese and green onion
